Turn this classic Nigerian breakfast recipe into a party favorite. Experiment with adding seafood, chicken or beef to provide for a hearty moi-moi. Consider experimenting with different molds to create a theme that ties your party together.
Ingredients
- 4 cups Akara batter
- 1 red bell pepper
- 1/2 cup of vegetable oil
- 3 eggs
- 1 cup of water
- Salt to taste
Instructions
- Preheat oven to 350°.
- Grease 24 cup cake molds; set aside.
- Place red bell pepper in blender and puree until smooth.
- In a large bowl, combine purred bell peppers, Akara batter, eggs, vegetable oil, water and salt. Whisk on medium high speed for 5 minutes;
- Pour batter into molds, filling each mold 3/4 of the way. Place the molds into a muffin pan. Pour enough hot water into the pan to come halfway up the sides of the muffin pan. Cover muffin pan with foil.
- Bake for 45 minutes until set or until toothpick inserted in the middle come out clean. Serve while hot.
Notes
Whisking the Akara batter incorporates air which produces a lighter pudding.
