These delectable breakfast creations invoke nostalgic memories of sweet Niaja. It invokes memories of long school vacations (or “vacs”); when your siblings were home from school and your parents were at work. This meant that there was much time for mischief. We could watch all the movies we wanted, we could clandestinely go for parties and we could eat what we wanted. Ahh…. I miss those days.
Nigerian pancakes are usually sweeter and thinner than its American counterpart. They have a crepe like texture but are not as thin as French crepes. In fact, one could say they are a healthy medium between the American Pancake and the French crepe. I have taken the pleasure of modifying this recipe. Most Nigerian pancakes call for nutmeg which gives the pancakes a nice nutty flavor. Also, I have taken the liberty of adding butter, which gives the pancake batter a nice buttery taste. Please consider modifying your own recipe to suit your needs.
Ingredients
- 1 1/3 cup all-purpose flour
- 1/3 cup of sugar
- ¼ tsp salt
- 2 eggs
- 2 tbsp butter, melted
- 1 cup whole milk
- ½ cup of water
- ¼ tsp vanilla extract (optional)
Instructions
- In a large mixing bowl whisk together the dry ingredients, i.e., the flour, sugar and salt until combined. Set the dry ingredients aside.
- In mixing bowl whisk together the wet ingredients, i.e., the eggs, milk and vanilla essence.
- Gradually add the wet ingredients to the dry mixture, stirring to combine. Beat until smooth.
- Slowly add the melted butter to the pancake batter.Beat slightly until blended.
- Heat a lightly oiled 6 inch frying pan over medium high heat. Pour or scoop the batter onto the frying pan using approximately 1 soup ladle or 1/2 a cup for each pancake. Tilt the pan with a circular motion so that the batter coats the surface evenly.
- Cook until bubbles form, then flip pancake and cook the other side until golden brown
- Serve while hot
Notes
To melt the butter place two tablespoons of butter in a microwave bowl. Heat butter in in the Microwave for 30 seconds. Set melted butter aside to cool. Be creative, stuff your pancake with Jam or Marmalade
