I think I have mastered the Nigerian Meat pie, but I wasn’t sure that I could pull off a Nigerian Chicken Pie as well. To make this recipe Easy Nigerian Chicken Pie recipe, I gathered all the usual suspects: flour, minced chicken, potatoes, bread crumbs and thyme in anticipation of pulling off a great Chicken Bake. My “better half” or I should say “he who shall not be named” walked around the kitchen looking curious: What are you doing, and I responded, “I am going to bake a Nigerian Chicken Pie.” And he said, “I am not sure if you can pull that off.” The gauntlet was thrown, so of course I had to take up the challenge.
This recipe starts out with a basic meat pie crust: mix together flour, salt and cold butter until the flour resembles fine sand. Add eggs, cold water and vinegar. Mix until the dough comes together. Let the dough rest in the fridge until ready to assemble the pie.
For the filling I used my meat pie recipe but swapped out the beef for chicken. I know not very imaginative, but it made me realize that my meat pie recipe could be a base for other types of meats: pork, lamb, turkey.
